- 3 medium zucchini, cubed
- Olive oil spray (or 1 tablespoon of olive oil)
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 3 heaping tbsp grated Parmesan
Instructions
- Wash and pat dry the zucchini; trim the ends and cut into 1-inch cubes.
- Preheat the air fryer to 400°F (200°C).
- In a mixing bowl, coat zucchini with olive oil spray or drizzle with olive oil.
- Add Italian seasoning, salt, and pepper; toss to coat.
- Arrange zucchini in a single layer in the air fryer basket.
- Air fry at 400°F (200°C) for 10–15 minutes, shaking halfway through for even browning.
- Once tender and golden, remove and sprinkle Parmesan over the zucchini.
- Serve warm, optionally adding lemon zest or fresh herbs before serving.
