Description

A simple and nutritious air fryer side dish featuring fresh zucchini and Parmesan cheese for a cozy flavor.


Ingredients

  • 3 medium zucchini, cubed
  • Olive oil spray (or 1 tablespoon of olive oil)
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 3 heaping tbsp grated Parmesan

Instructions

  1. Wash and pat dry the zucchini; trim the ends and cut into 1-inch cubes.
  2. Preheat the air fryer to 400°F (200°C).
  3. In a mixing bowl, coat zucchini with olive oil spray or drizzle with olive oil.
  4. Add Italian seasoning, salt, and pepper; toss to coat.
  5. Arrange zucchini in a single layer in the air fryer basket.
  6. Air fry at 400°F (200°C) for 10–15 minutes, shaking halfway through for even browning.
  7. Once tender and golden, remove and sprinkle Parmesan over the zucchini.
  8. Serve warm, optionally adding lemon zest or fresh herbs before serving.
