- 2 cups broccoli (fresh or frozen, finely chopped)
- 1 cup shredded cheddar cheese (sharp cheddar recommended)
- ¼ cup grated Parmesan cheese
- ½ cup breadcrumbs (panko for extra crunch or regular for a softer texture)
- 2 large eggs (beaten)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and pepper, to taste
- Optional: chili flakes, parsley, or Italian seasoning for added flavor
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- If using frozen broccoli, thaw and drain well before chopping. Steam or blanch fresh broccoli for 2–3 minutes, then finely chop.
- In a large bowl, combine chopped broccoli, cheddar cheese, Parmesan, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper. Mix well until fully combined.
- Scoop about 1–2 tablespoons of the mixture and form into small balls. Place them on the prepared baking sheet.
- Bake for 20–25 minutes, or until golden brown and crisp on the outside.
- Let cool slightly before serving. Serve with ranch, marinara, or your favorite dipping sauce.

- Make ahead and freeze after baking—just reheat in the oven or air fryer.
