- 1 lb large fresh strawberries
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp vanilla extract
- 1–2 tbsp heavy cream (optional, for creamier consistency)
- Optional: 1/4 cup graham cracker crumbs for topping
- Optional: Fresh mint leaves for garnish
- Optional: Extra small strawberries for decoration
Instructions
- Rinse and dry the strawberries. Slice off the stems and cut each strawberry in half lengthwise. Use a small spoon or melon baller to gently scoop out a bit of the center to create a well for the filling.
- In a medium bowl, beat the softened cream cheese, powdered sugar, vanilla extract, and heavy cream (if using) until smooth and fluffy.
- Transfer the cheesecake filling to a piping bag or zip-top bag with the corner snipped off.
- Pipe the filling into the hollowed-out strawberries, forming a small swirl or mound.
- Optional: Sprinkle graham cracker crumbs over the top and garnish with mint leaves or small strawberries.
- Refrigerate for at least 15 minutes before serving to allow the filling to set slightly.

- Use a piping bag for a more decorative presentation.
- Best served chilled. Can be made a few hours ahead and kept in the fridge.
