Ingredients

  • 1 can black beans, drained and rinsed
  • 1½ cups corn (fresh, frozen, or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced (optional)
  • 1/4 cup chopped cilantro
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional: 1 jalapeño, seeded and finely chopped

Instructions

  1. In a large bowl, combine the black beans, corn, bell pepper, red onion, cherry tomatoes, and avocado if using.
  2. In a small bowl or jar, whisk together the lime juice, olive oil, salt, and pepper. Add jalapeño if desired.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Sprinkle with chopped cilantro and serve immediately or chill for 30 minutes to let flavors meld.
