Instructions
- Prepare the crust: Mix crushed digestive biscuits and melted butter in a bowl. Press evenly into the bottom of a lined 8×8-inch baking dish. Chill for 15 minutes to set.
- Make the pistachio layer: Blend ground pistachios, confectioners’ sugar, and heavy cream into a thick, spreadable paste. Spread over the chilled crust.
- Prepare cream cheese layer: Beat cream cheese with confectioners’ sugar and vanilla extract until smooth. Gently spread over the pistachio layer. Chill for 20 minutes.
- Cook blackberry topping: In a saucepan, combine blackberries, granulated sugar, lemon juice, and cornstarch. Cook over medium heat for 8–10 minutes until thick and jammy. Cool completely.
- Assemble: Spoon the cooled blackberry mixture evenly over the cream cheese layer. Sprinkle with chopped pistachios and garnish with fresh blackberries.
- Chill and serve: Refrigerate the bars for at least 1–2 hours, or until fully set. Slice and serve with optional mint or a drizzle of white chocolate.
