- 1/2 cup blueberries (fresh or frozen)
- 2 tbsp honey or maple syrup
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 tsp cornstarch (optional, for thickening the blueberry compote)
- Optional: Chopped nuts (like almonds or walnuts)

Instructions
- In a small saucepan over medium heat, combine the blueberries, lemon juice, and 1 tbsp honey or maple syrup. Stir occasionally until the berries break down and the mixture simmers.
- If using, stir in the cornstarch and cook for another minute to thicken. Remove from heat and let cool slightly.
- In a bowl, mix the Greek yogurt with vanilla extract and the remaining 1 tbsp of honey or maple syrup.
- Line a mini muffin pan with paper liners or use a silicone mold. Spoon a small amount of yogurt into each mold.
- Add a swirl of the blueberry mixture on top of each yogurt base. Use a toothpick to gently swirl the layers together.
- Top with optional add-ons like nuts, granola, coconut, or cinnamon if desired.
- Freeze for at least 2–3 hours or until completely firm.
- Once frozen, pop the bites out of the mold and store in a sealed container in the freezer until ready to enjoy.
