Description

  • 1/2 cup blueberries (fresh or frozen)
  • 2 tbsp honey or maple syrup
  • 1 tsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tsp cornstarch (optional, for thickening the blueberry compote)
  • Optional: Chopped nuts (like almonds or walnuts)
  • Optional: Granola
  • Optional: Shredded coconut
  • Optional: Other fruits such as strawberries or raspberries
  • Optional: A sprinkle of cinnamon

Instructions

  1. In a small saucepan over medium heat, combine the blueberries, lemon juice, and 1 tbsp honey or maple syrup. Stir occasionally until the berries break down and the mixture simmers.
  2. If using, stir in the cornstarch and cook for another minute to thicken. Remove from heat and let cool slightly.
  3. In a bowl, mix the Greek yogurt with vanilla extract and the remaining 1 tbsp of honey or maple syrup.
  4. Line a mini muffin pan with paper liners or use a silicone mold. Spoon a small amount of yogurt into each mold.
  5. Add a swirl of the blueberry mixture on top of each yogurt base. Use a toothpick to gently swirl the layers together.
  6. Top with optional add-ons like nuts, granola, coconut, or cinnamon if desired.
  7. Freeze for at least 2–3 hours or until completely firm.
  8. Once frozen, pop the bites out of the mold and store in a sealed container in the freezer until ready to enjoy.
