Description

Breakfast Fruit and Yogurt Pizza is a refreshing and fun way to start your day! This no-bake breakfast combines a crunchy granola crust, a creamy yogurt and berry cream cheese spread, and a vibrant assortment of fresh fruit. It’s perfect for brunches, special occasions, or healthy meal prep.

  • Strawberry Almond Granola (without craisins or egg white)
  • 8 oz whipped mixed berry cream cheese
  • 1 (5.3 oz) carton vanilla Greek yogurt
  • 1/2 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 mango, peeled and sliced
  • 1 pint strawberries, sliced
  • 1 pint blackberries, sliced
  • 1 1/2 cups grapes, sliced
  • 1 pint raspberries
  • Optional: Honey, chopped nuts (walnuts or pecans), coconut flakes, fresh mint leaves

Instructions

  1. Prepare the crust: Press the granola firmly into the bottom of a parchment-lined 9-inch springform pan or tart pan to form an even crust. Place in the freezer for 15–20 minutes to firm up.
  2. Make the yogurt spread: In a medium bowl, mix the whipped mixed berry cream cheese, vanilla Greek yogurt, lemon zest, and lemon juice until smooth and creamy.
  3. Assemble the pizza: Remove the crust from the freezer and spread the yogurt mixture evenly over it.
  4. Top with fruit: Arrange the mango, strawberries, blackberries, grapes, and raspberries on top in a colorful pattern.
  5. Add toppings: Drizzle with honey and sprinkle with optional add-ons like chopped nuts, coconut flakes, or mint leaves for added flavor and texture.
  6. Serve immediately or chill until ready to serve. Slice and enjoy!

Notes

  • To keep the crust from crumbling, press it very firmly into the pan and use a bit of honey or nut butter if needed for extra binding.
