- Strawberry Almond Granola (without craisins or egg white)
- 8 oz whipped mixed berry cream cheese
- 1 (5.3 oz) carton vanilla Greek yogurt
- 1/2 tsp lemon zest
- 1 tbsp lemon juice
- 1 mango, peeled and sliced
- 1 pint strawberries, sliced
- 1 pint blackberries, sliced
- 1 1/2 cups grapes, sliced
- 1 pint raspberries
- Optional: Honey, chopped nuts (walnuts or pecans), coconut flakes, fresh mint leaves
Instructions
- Prepare the crust: Press the granola firmly into the bottom of a parchment-lined 9-inch springform pan or tart pan to form an even crust. Place in the freezer for 15–20 minutes to firm up.
- Make the yogurt spread: In a medium bowl, mix the whipped mixed berry cream cheese, vanilla Greek yogurt, lemon zest, and lemon juice until smooth and creamy.
- Assemble the pizza: Remove the crust from the freezer and spread the yogurt mixture evenly over it.
- Top with fruit: Arrange the mango, strawberries, blackberries, grapes, and raspberries on top in a colorful pattern.
- Add toppings: Drizzle with honey and sprinkle with optional add-ons like chopped nuts, coconut flakes, or mint leaves for added flavor and texture.
- Serve immediately or chill until ready to serve. Slice and enjoy!
Notes
- To keep the crust from crumbling, press it very firmly into the pan and use a bit of honey or nut butter if needed for extra binding.
