These brownie ice cream sandwiches are the ultimate summer dessert—rich, fudgy brownies sandwich your favorite flavor of creamy ice cream. Easy to customize and even easier to devour!

Ingredients

Scale

Essentials:

  • 1 1/2 cups unsalted butter, melted
  • 2 1/4 cups granulated sugar
  • 1 1/2 cups light brown sugar, packed
  • 6 large eggs, room temperature
  • 3 tbsp vegetable oil
  • 2 tbsp pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups cocoa powder
  • 1 1/2 tsp salt
  • 15 cups of your favorite ice cream flavor (vanilla, chocolate, or fruity)

Optional Add-Ons:

  • 1 cup chocolate chips
  • 1 cup chopped nuts (walnuts, pecans)
  • Sprinkles or crushed candies for decorating

Substitutions and Shortcuts:

  • Margarine instead of butter (flavor will differ)
  • Unsweetened applesauce (1/4 cup per egg) for egg-free version
  • Sugar alternatives (e.g., coconut sugar, stevia) for a low-sugar version
  • Frozen yogurt as a lighter ice cream substitute

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C).
  2. Prepare Baking Pans: Grease two 8×8-inch pans and line with parchment paper, leaving overhangs.
  3. Mix Wet Ingredients: In a bowl, combine melted butter, granulated sugar, and brown sugar. Mix until smooth. Add eggs one at a time, then mix in oil and vanilla.
  4. Combine Dry Ingredients: In a separate bowl, whisk flour, cocoa powder, and salt.
  5. Mix Everything: Gradually add dry ingredients to wet, mixing on low speed just until combined.
  6. Bake: Divide batter between pans. Smooth tops and bake 30–40 minutes. Check doneness with a toothpick.
  7. Cool Completely: Let cool in pans 10 minutes, then lift out and cool fully on a rack.
  8. Soften Ice Cream: Let ice cream thaw for 5–10 minutes to soften slightly.
  9. Assemble Sandwich: Place one brownie back in its pan, spread softened ice cream over top. Place second brownie on top, press gently, cover, and freeze for 6+ hours or overnight.
  10. Cut and Serve: Let thaw 5–10 minutes, lift out, and slice into 8 squares. Enjoy!

Notes

  • Store in an airtight container in the freezer for up to one week.
  • Use an oven thermometer to ensure accurate baking temperature.
  • Do not overmix the batter—just until combined for chewy results.
  • Try layering different ice cream flavors for a fun twist!
