These Brownies with Strawberries and Chocolate Ganache are the ultimate dessert trifecta: rich, fudgy brownies, juicy fresh strawberries, and a silky chocolate ganache topping. Perfect for special occasions or whenever you’re craving a decadent treat with a fruity twist.

Ingredients

Scale

Essential Ingredients:

  • 1 cup unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

Fresh Fruit:

  • 1 pint fresh strawberries, sliced

Chocolate Ganache:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Optional Add-Ons:

  • Chopped walnuts or pecans
  • Raspberries or blueberries
  • Fresh mint leaves for garnish

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
  2. Make brownie batter: In a large saucepan, melt butter over medium heat. Remove from heat and whisk in sugar, then eggs one at a time. Stir in vanilla extract.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually mix into the wet ingredients until just combined. Fold in nuts if using.
  4. Bake: Pour batter into the prepared pan and smooth the top. Bake for 25–30 minutes or until a toothpick inserted comes out with a few moist crumbs. Let cool completely.
  5. Layer strawberries: Once brownies are cool, evenly layer sliced strawberries over the top.
  6. Make ganache: Heat heavy cream in a small saucepan until just simmering. Pour over chocolate chips in a bowl. Let sit for 1–2 minutes, then stir until smooth.
  7. Top with ganache: Pour ganache over the strawberry layer and spread gently. Chill brownies for 30 minutes or until ganache is set.
  8. Serve: Garnish with mint leaves or extra berries if desired. Slice and enjoy!

Notes

  • Use high-quality cocoa powder and chocolate for the richest flavor.
