Ingredients
- Ground Cumin (3 tsp)
- Smoked Paprika (4 tsp + 1–2 tbsp)
- Dried Thyme (2 tsp)
- Dried Oregano (2 tsp)
- Red Chilli Flakes (1 tsp)
- Garlic Salt (1 tsp)
- Olive Oil (1 tbsp)
- Lemon (1)
- Skinless Chicken Breasts (4)
- Sweet Potatoes (4)
- Optional Fresh Herbs (like parsley or cilantro)
- Optional Avocado or Guacamole
- Optional Yogurt or Sour Cream
- Optional Cilantro Lime Rice
Instructions
- Prepare the Cajun Spice Mix by combining ground cumin, smoked paprika, dried thyme, dried oregano, red chili flakes, garlic salt, salt, and pepper in a bowl.
- Marinate the Chicken by flattening the breasts and coating them with the spice mix. Refrigerate for 3 to 4 hours, preferably overnight.
- Preheat the Oven to 200°C (180°C Fan, Gas Mark 6).
- Prepare the Sweet Potato Wedges by tossing them in olive oil, paprika, salt, and pepper.
- Bake the Sweet Potatoes on a baking sheet for 20-25 minutes, turning halfway through.
- Cook the Chicken on a griddle pan for 7-8 minutes on each side until cooked through.
- Serve by arranging the chicken and sweet potatoes on a platter, garnished with lemon juice and fresh herbs.
Notes
Allowing the chicken to marinate overnight enhances the flavors. Avoid overcrowding the baking sheet for optimal roasting of sweet potatoes.
