For the Brownie Base:
- 1 stick (113g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 1 cup (85g) unsweetened cocoa powder
- 1/4 tsp fine salt
- 1/2 tsp vanilla extract
- 2 large eggs
- 1/2 cup (62g) all-purpose flour
For the Cheesecake Filling:
- 24 oz (680g) cream cheese, softened
- 1/2 cup (100g) granulated sugar
- 1/2 cup (100g) light brown sugar
- 1/4 cup (60ml) heavy cream
- 4 large eggs, room temperature
- 2 tsp vanilla extract or vanilla bean paste
Optional Topping:
- Caramel sauce, for drizzling
- Flaky sea salt, for garnish (optional)
Instructions
- Preheat oven to 325°F (160°C). Line a 9-inch springform pan with parchment and lightly grease the sides.
- Make the Brownie Base: In a bowl, whisk together melted butter, sugar, cocoa powder, and salt. Stir in vanilla and eggs until smooth. Add flour and mix just until combined. Spread into the bottom of the prepared pan.
- Bake for 15 minutes, then remove and let cool slightly while preparing the filling.
- Make the Cheesecake Filling: In a large bowl, beat cream cheese until smooth. Add both sugars and mix until creamy. Blend in heavy cream, then add eggs one at a time, mixing on low. Stir in vanilla extract.
- Pour cheesecake batter over the baked brownie base. Smooth the top.
- Bake at 325°F (160°C) for 50–60 minutes, or until the center is just set and slightly wobbly. Turn off the oven, crack the door, and let the cheesecake cool for 1 hour inside.
- Chill in the fridge for at least 4 hours or overnight.
- Before serving, drizzle with caramel sauce and sprinkle with sea salt if using.
