- 1 yellow onion, diced
- 2 cups shredded cheddar cheese, divided
- 1 can condensed cheddar cheese soup
- 1 can condensed cream of mushroom soup
- 1 box Cheddar Bay Biscuit mix
- 2 cups milk
- ¼ cup butter, melted

- 1 cup frozen vegetables (peas, corn, or chopped bell peppers)
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon smoked paprika

Instructions
- Preheat oven: Preheat your oven to 375°F (190°C).
- Cook the beef: In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess grease.
- Stir in soups: Add the condensed cheddar soup and cream of mushroom soup to the beef. Stir until fully combined. If using, mix in frozen vegetables and spices now. Simmer for 2–3 minutes.
- Layer in baking dish: Transfer the beef mixture into a 9×13-inch baking dish. Sprinkle 1 cup of cheddar cheese on top.
- Make biscuit topping: In a large bowl, mix the Cheddar Bay Biscuit mix with 2 cups of milk and the seasoning packet (included in the box). Pour over the beef layer.
- Top and bake: Drizzle melted butter over the biscuit topping and sprinkle with remaining 1 cup of cheese.
- Bake: Bake uncovered for 30–35 minutes or until the biscuit topping is golden and cooked through.
- Serve: Let rest for 5 minutes before serving. Garnish with chopped parsley, if desired.
