A comforting and healthy twist on a classic dish, this Cheesy Chicken Spaghetti Squash Casserole uses spaghetti squash instead of pasta for a guilt-free meal the whole family will love.

- 1 large spaghetti squash
- 2–3 large chicken breasts (about 1.25 pounds)
- 1 Tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1 medium green bell pepper, diced
- 6 ounces diced tomatoes (drained, about 2/3 cup)
- 1 10.5 ounce can cream of mushroom
- 1/4 cup plain Greek yogurt
- 1 teaspoon minced garlic
- 2 cups shredded cheese (divided)
- 2 Tablespoons chopped fresh basil or chives (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place each spaghetti squash half face down in a baking pan with 1/4-inch water.
- In a large casserole dish, place chicken breasts and sprinkle with Italian seasoning and salt.
- Bake both the spaghetti squash and chicken for 45-50 minutes until soft and cooked through (chicken reaches 165°F).
- While baking, prepare the other ingredients: dice the bell pepper, drain the tomatoes, and measure the cream of mushroom, Greek yogurt, and garlic.
- Once baked, let cool slightly, shred the chicken, and scrape the squash into a bowl.
- Combine the spaghetti squash, chicken, bell pepper, tomatoes, cream of mushroom, Greek yogurt, garlic, and half of the cheese in one bowl.
- Transfer the mixture to a casserole dish, top with remaining cheese, and bake at 350°F (175°C) for 15-20 minutes until hot and cheese melts.
- Garnish with fresh basil or chives if desired.
Notes
Feel free to customize the dish with your favorite vegetables or cheeses. Rotisserie chicken can be used for a quicker preparation.
