Description

A comforting and healthy twist on a classic dish, this Cheesy Chicken Spaghetti Squash Casserole uses spaghetti squash instead of pasta for a guilt-free meal the whole family will love.


Ingredients

  • 1 large spaghetti squash
  • 23 large chicken breasts (about 1.25 pounds)
  • 1 Tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1 medium green bell pepper, diced
  • 6 ounces diced tomatoes (drained, about 2/3 cup)
  • 1 10.5 ounce can cream of mushroom
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon minced garlic
  • 2 cups shredded cheese (divided)
  • 2 Tablespoons chopped fresh basil or chives (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place each spaghetti squash half face down in a baking pan with 1/4-inch water.
  4. In a large casserole dish, place chicken breasts and sprinkle with Italian seasoning and salt.
  5. Bake both the spaghetti squash and chicken for 45-50 minutes until soft and cooked through (chicken reaches 165°F).
  6. While baking, prepare the other ingredients: dice the bell pepper, drain the tomatoes, and measure the cream of mushroom, Greek yogurt, and garlic.
  7. Once baked, let cool slightly, shred the chicken, and scrape the squash into a bowl.
  8. Combine the spaghetti squash, chicken, bell pepper, tomatoes, cream of mushroom, Greek yogurt, garlic, and half of the cheese in one bowl.
  9. Transfer the mixture to a casserole dish, top with remaining cheese, and bake at 350°F (175°C) for 15-20 minutes until hot and cheese melts.
  10. Garnish with fresh basil or chives if desired.

Notes

Feel free to customize the dish with your favorite vegetables or cheeses. Rotisserie chicken can be used for a quicker preparation.
