Instructions
- Prepare the meatballs: In a bowl, mix ground chicken, almond flour, egg, minced garlic, Parmesan, salt, and pepper until just combined. Do not overmix.
- Form the meatballs: Scoop out 1 to 1.5 tablespoon portions and roll into balls. Set aside.
- Cook the meatballs: Heat olive oil in a large skillet over medium heat. Add meatballs and cook for 6–8 minutes, turning to brown on all sides. Remove and set aside.
- Make the sauce: In the same skillet, add butter. Once melted, stir in chicken broth, lemon juice, and capers. Bring to a simmer.
- Thicken the sauce: Stir in the arrowroot (or cornstarch) slurry and simmer until the sauce begins to thicken, about 2–3 minutes.
- Combine: Return the meatballs to the skillet and simmer in the sauce for 5 more minutes or until fully cooked and coated.
- Garnish and serve: Sprinkle with chopped parsley and serve warm. Great over zucchini noodles or rice.
