Ingredients

  • 1 box Banza pasta (or your favorite pasta)
  • 2 cups of your favorite pasta sauce
  • 1 tablespoon olive oil
  • 1 large bag frozen mixed vegetables (e.g., bell peppers, peas, carrots)
  • 4 fully cooked chicken sausage links, sliced
  • Optional:
  • Parmesan cheese, for garnish
  • Fresh herbs (basil or parsley), chopped
  • Chili flakes, to taste
  • Additional vegetables like spinach or zucchini, chopped

Instructions

  1. Bring a large pot of water to a boil and cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced chicken sausage and cook for 3–4 minutes until browned.
  3. Add the frozen mixed vegetables and cook for another 5–7 minutes, stirring occasionally, until vegetables are tender.
  4. Stir in the pasta sauce and heat through. If using spinach or zucchini, add now and cook until wilted or tender.
  5. Add the cooked pasta to the skillet and toss everything together until well combined.
  6. Serve hot, garnished with Parmesan cheese, fresh herbs, and chili flakes if desired.

Notes

  • Banza pasta adds extra protein and fiber, but any pasta works!
  • Feel free to use fresh vegetables if you prefer over frozen.
