- 1 can (15 ounces) black beans, drained and rinsed
- 1/4 cup unsweetened cocoa powder
- 1/4 cup peanut butter
- 1/3 cup maple syrup
- 1 cup old fashioned rolled oats
Optional Add-Ons:
- 1/4 cup chocolate chips
- 1/2 teaspoon coconut oil (for melting chocolate)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a food processor, blend the black beans, cocoa powder, peanut butter, and maple syrup until smooth.
- Add the rolled oats and pulse a few times to combine while keeping some texture.
- If using chocolate chips, fold them into the mixture.
- Spread the mixture evenly in the prepared baking dish and smooth the top.
- Bake for 20–25 minutes, or until the bars are set and slightly firm to the touch.
- Let cool completely before slicing into squares. If topping with chocolate, melt the chips with coconut oil and drizzle or spread over cooled bars.
- Store in an airtight container in the fridge for up to one week.
