Essential Ingredients:
- 2 cups chocolate cookie crumbs (about 20 chocolate sandwich cookies, finely crushed)
- 6 tablespoons melted butter
- 1.5 quarts vanilla or cookie dough ice cream, softened
- 1 cup mini chocolate chips
- 1 cup edible cookie dough (store-bought or homemade)
Optional Add-Ons:
- Extra cookie dough balls for topping
- Mini and regular chocolate chips for garnish
- Whipped cream for serving
Instructions
- Prepare the Crust: In a medium bowl, mix the chocolate cookie crumbs with the melted butter until evenly combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Freeze for 15 minutes to set.
- Layer the Ice Cream: Spread half of the softened ice cream over the chilled crust. Sprinkle half the mini chocolate chips and half the cookie dough pieces evenly over the ice cream. Lightly press them in.
- Add More Layers: Spread the remaining ice cream on top. Sprinkle with the remaining mini chocolate chips and cookie dough pieces. Smooth the top with a spatula.
- Freeze: Cover and freeze the cake for at least 4 hours or until completely firm (overnight is best).
- Decorate & Serve: Before serving, let the cake sit at room temperature for 5–10 minutes. Remove from pan. Garnish with extra cookie dough balls, chocolate chips, and whipped cream if desired. Slice and serve immediately.

- You can line the springform pan with parchment paper for easier removal.
- To soften ice cream quickly, let it sit at room temperature for 15–20 minutes.
- Make homemade edible cookie dough by omitting eggs and heat-treating the flour for safety.
