- 3/4 cup hot water or hot brewed coffee
- 1/2 cup unsweetened cocoa powder
- 2 large eggs
- 3/4 cup whole milk
- 24 oz ricotta cheese
- 1 tsp vanilla extract (optional)
- 1/4–1/2 cup sugar (optional)
- 1/3 cup chocolate chips or chopped dark chocolate (optional)
- Zest of an orange (optional)
- Toasted almonds or pistachios (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan.
- In a medium bowl, whisk cocoa powder with hot water or coffee until smooth.
- In a large mixing bowl, combine ricotta cheese, eggs, and milk until creamy. Add vanilla and sugar if desired.
- Gradually mix in the cocoa mixture into the ricotta mixture, adding any optional ingredients you prefer.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30–35 minutes, checking doneness with a toothpick starting at 28 minutes.
- Cool in the pan for 15–20 minutes before transferring to a wire rack to cool completely.
- Dust with powdered sugar or top with whipped cream before serving.
Notes
For a more decadent treat, try adding nuts or chocolate chips to the batter. This cake can be refrigerated and tastes better the next day.
