Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with olive oil or cooking spray.
- In a large bowl, crack the eggs and whisk until fully combined.
- Stir in the cottage cheese, shredded cheddar, chopped spinach, diced red bell pepper, chopped onion, salt, and black pepper. Mix until evenly distributed.
- Pour the egg mixture into the prepared baking dish, smoothing it out evenly.
- Bake for 30–35 minutes, or until the eggs are fully set. To check doneness, insert a toothpick into the center—it should come out clean.
- Let the bake cool for about 5 minutes before slicing. Serve warm or at room temperature.
