Cowboy Butter Beef and Golden Potatoes in the Slow Cooker

Description

A comforting and nutritious slow-cooked meal featuring beef and Yukon Gold potatoes, perfect for cozy dinners.


Ingredients

  • 2 pounds of chuck roast or brisket
  • 1.5 pounds of small Yukon Gold or red potatoes, halved
  • 1/2 cup of unsalted butter, softened
  • 4 cloves of garlic, minced
  • 2 tablespoons of Dijon mustard
  • 2 tablespoons of fresh lemon juice
  • 2 tablespoons of fresh parsley, chopped
  • 1 tablespoon of fresh chives, chopped
  • 1 teaspoon of paprika
  • 1/2 teaspoon of crushed red pepper flakes
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/4 cup of beef broth

Instructions

  1. Mix softened butter with minced garlic, Dijon mustard, lemon juice, parsley, chives, paprika, crushed red pepper, salt, and pepper until well combined to create the cowboy butter.
  2. Optional: Sear the chuck roast in a hot pan for 2 to 3 minutes on each side for enhanced flavor.
  3. Place halved potatoes at the bottom of the slow cooker and the beef on top.
  4. Spread the cowboy butter blend evenly over the meat and pour beef broth around the sides.
  5. Cover and set the slow cooker on low for 6 to 8 hours or high for 3 to 4 hours until the beef is tender.
  6. If desired, mix 1 tablespoon of cornstarch with 1 tablespoon of water during the last 30 minutes to thicken the sauce.
  7. Serve with a sprinkle of fresh parsley for added brightness.

Notes

For a dairy-free version, substitute olive oil for butter. You can use leaner cuts of beef or pre-chopped vegetables for convenience.
