Ingredients

- 2 pounds of chuck roast or brisket
- 1.5 pounds of small Yukon Gold or red potatoes, halved
- 1/2 cup of unsalted butter, softened
- 4 cloves of garlic, minced
- 2 tablespoons of Dijon mustard
- 2 tablespoons of fresh lemon juice
- 2 tablespoons of fresh parsley, chopped
- 1 tablespoon of fresh chives, chopped
- 1 teaspoon of paprika
- 1/2 teaspoon of crushed red pepper flakes
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/4 cup of beef broth
Instructions
- Mix softened butter with minced garlic, Dijon mustard, lemon juice, parsley, chives, paprika, crushed red pepper, salt, and pepper until well combined to create the cowboy butter.
- Optional: Sear the chuck roast in a hot pan for 2 to 3 minutes on each side for enhanced flavor.
- Place halved potatoes at the bottom of the slow cooker and the beef on top.
- Spread the cowboy butter blend evenly over the meat and pour beef broth around the sides.
- Cover and set the slow cooker on low for 6 to 8 hours or high for 3 to 4 hours until the beef is tender.
- If desired, mix 1 tablespoon of cornstarch with 1 tablespoon of water during the last 30 minutes to thicken the sauce.
- Serve with a sprinkle of fresh parsley for added brightness.
Notes
For a dairy-free version, substitute olive oil for butter. You can use leaner cuts of beef or pre-chopped vegetables for convenience.
