Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces fettuccine pasta
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions

  1. Pat the chicken breasts dry with paper towels and season with Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper. Let it sit for 5-10 minutes.
  2. Heat olive oil in a skillet and sear the chicken breasts for 3-5 minutes per side until golden-brown; cook to 160-165°F.
  3. Remove chicken and let rest for 5-8 minutes; slice thinly against the grain.
  4. In the same skillet, melt butter and sauté minced garlic for 30-45 seconds.
  5. Add heavy cream and chicken broth, simmer for 3-5 minutes to thicken.
  6. Stir in grated Parmesan cheese and lemon juice until melted and smooth.
  7. Cook fettuccine according to package instructions; reserve 1/2 cup of pasta water.
  8. Add drained fettuccine to the sauce, toss to coat, adding pasta water as needed. Top with sliced chicken and garnish with chopped parsley.
  9. Serve immediately with extra Parmesan if desired.

Notes

For a lighter version, substitute heavy cream with half-and-half thickened with cornstarch. Consider optional add-ons like baby spinach or sun-dried tomatoes for variation.
