Description
A comforting one-pot dish featuring creamy orzo, sweet corn, and a kick of spice.
Ingredients

- 1 tablespoon butter
- 1 small onion, finely chopped
- 2 cloves garlic, crushed
- 170g (1 cup) sweet corn (frozen or canned), drained
- 1 small red bell pepper, diced
- 1 small green bell pepper, diced
- 175g (1 cup) uncooked orzo
- 300ml (1.25 cups) chicken or vegetable broth
- 200ml light cream or half-and-half
- 60g (2.2 oz) cheddar, freshly grated
- 60g (2.2 oz) parmesan, freshly grated
- Salt and black pepper to taste
- Fresh parsley or cilantro, finely chopped
Instructions
- Melt the butter in a large deep skillet over medium-high heat.
- Add sweet corn and sauté until golden, about 3-4 minutes; remove from skillet.
- Sauté chopped onion and crushed garlic in the same skillet until softened, about 2-3 minutes.
- Return the corn to the skillet and stir.
- Add spices and diced bell peppers; cook for a couple of minutes.
- Incorporate uncooked orzo and stir well.
- Pour in broth and cream; stir and bring to a gentle simmer.
- Let it cook for about 9-10 minutes, stirring occasionally, until orzo is cooked and liquid is absorbed.
- Add cheddar, half of the parmesan, and chopped herbs; stir until cheese melts.
- Season to taste and serve warm, topped with remaining parmesan.
