A hearty, creamy, Tex-Mex inspired soup loaded with ground beef, beans, potatoes, tomatoes, chilies, and rich creamy components for the ultimate comfort meal.

- 1 lb ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 4 cups beef broth
- 1 (14.5-ounce) can diced tomatoes with juice
- 1 (15-ounce) can whole kernel corn, drained
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (10-ounce) can diced tomatoes with green chilies
- 1 cup diced potatoes (peeled or unpeeled)
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and black pepper, to taste
- 1 cup heavy cream or half-and-half
- 1 cup shredded cheddar cheese
- Sliced green onions, for topping
- Extra shredded cheese, for topping
- Crushed tortilla chips, for topping
- Optional: Diced jalapeños, hot sauce, bell peppers, carrots, zucchini
- Optional substitutions: Ground turkey, chicken, extra beans or lentils
Instructions
- Heat a large pot over medium heat. Add ground beef and cook for 5–7 minutes, breaking it apart until browned. Drain excess fat if needed.
- Add diced onion and minced garlic to the pot. Sauté for 3–4 minutes until the onion becomes translucent and fragrant.
- Pour in beef broth, diced tomatoes, corn, black beans, and diced tomatoes with green chilies. Add diced potatoes, smoked paprika, chili powder, cumin, salt, and pepper. Stir well and bring to a gentle boil.
- Reduce heat and simmer uncovered for 15–20 minutes, or until potatoes are fork-tender, stirring occasionally.
- Stir in the heavy cream or half-and-half, then add shredded cheddar cheese. Mix until fully melted and the soup becomes creamy.
- Taste and adjust seasonings as needed. Serve hot, topped with sliced green onions, extra cheese, and crushed tortilla chips.
Notes
- Ground turkey or chicken can replace beef.
- To make it meatless, omit beef and add more beans or lentils.
- Increase heat using jalapeños or hot sauce.
- Canned diced potatoes offer a quicker alternative.
- Pre-cooked shredded beef or rotisserie chicken can speed up prep time.
