  • 8 oz mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup vegetable broth
  • 1 cup coconut milk or cashew cream
  • Salt and black pepper, to taste
  • Nutritional yeast, for garnish (optional)
  • Lemon zest or juice (optional)
  • Red pepper flakes or extra ground black pepper (optional)
  • Fresh herbs (parsley, basil, or chives) (optional)
  • 2 tablespoons tomato paste (optional)
  • 1/41/3 cup canned chickpeas or white beans (optional)
  • 2 tablespoons pumpkin seeds or toasted walnuts (optional)
  • 1 tablespoon soy sauce or tamari (optional)
  • 1/2 cup frozen peas (optional)

Instructions

  1. Prep everything first: Measure the pasta, slice the mushrooms, dice the onion, and mince the garlic.
  2. Heat the pan and oil: Place a large skillet over medium heat and add the olive oil.
  3. Sauté the onion until translucent: Add diced onion and cook until soft and translucent.
  4. Cook the garlic and mushrooms: Add minced garlic and sliced mushrooms, cooking until mushrooms brown slightly.
  5. Add the pasta and liquids: Stir in dry pasta and pour in the vegetable broth and coconut milk or cashew cream.
  6. Simmer until pasta is al dente: Bring to a simmer and cook uncovered, stirring occasionally.
  7. Finish with spinach and any add-ons: Stir in the spinach and other optional add-ins.
  8. Final touches and plating: Remove from heat, add lemon juice or zest, and sprinkle with nutritional yeast and herbs before serving.
