Ingredients
Scale
Essential Ingredients:
- 2 cups fresh raspberries (plus a few extra for garnish)
- 1/4 cup granulated sugar
- 1 tbsp lemon juice (optional, enhances tartness)
- 1 cup heavy whipping cream (chilled)
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 1 tsp unflavored gelatin powder (optional, for firmer mousse)
- 2 tbsp cold water (only if using gelatin)
Optional Add-Ons:
- Chocolate shavings for garnish
- Fresh mint leaves
Instructions
- In a small saucepan, combine raspberries, granulated sugar, and lemon juice. Cook over medium heat for 3–5 minutes until berries break down. Mash with a fork and strain through a fine mesh sieve to remove seeds. Let cool.
- If using gelatin, sprinkle it over cold water in a small bowl and let sit for 5 minutes. Microwave for 10 seconds to dissolve, then stir into the raspberry puree.
- In a large bowl, beat heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
- Gently fold the cooled raspberry puree into the whipped cream until fully incorporated.
- Spoon mousse into serving glasses or bowls and chill for at least 2 hours to set.
- Top with fresh raspberries, chocolate shavings, or mint leaves before serving.
Notes
- For a dairy-free version, substitute coconut cream for the heavy cream.
- Adjust sugar based on raspberry sweetness.
- Skip gelatin for a softer, cloud-like mousse.
