Instructions

  1. Heat about 2 tablespoons of olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing for about 5 minutes until translucent and fragrant.
  2. Add the mixed vegetables and cook for 5–8 minutes, stirring occasionally, until slightly softened.
  3. Pour in the vegetable broth and bring the mixture to a boil.
  4. Reduce heat to low and simmer for 15–20 minutes, or until the vegetables are fork-tender.
  5. Stir in the heavy cream or milk and add the shredded cheese. Mix until the cheese fully melts and the soup becomes creamy.
