Description
A stunning and flavorful potato torte made with thinly sliced Yukon Gold potatoes, infused with balsamic vinegar, fresh thyme, and buttery richness. Crisp on the outside and tender inside, it’s an elegant side dish or vegetarian main.

- 2 pounds Yukon Gold potatoes, thinly sliced evenly
- 2 tablespoons balsamic vinegar (high-quality for the best flavor)
- 2 tablespoons fresh thyme leaves, stripped from stems
- 4 tablespoons butter, melted (adds richness and helps crisp)
- 2 tablespoons olive oil (for layering and crisping)
- 1 teaspoon garlic powder (boosts savory depth)
- Salt and freshly ground pepper, to taste (essential seasoning)
- ¼ cup grated Parmesan cheese (optional – adds savory umami and extra crisp texture)
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a 9-inch springform pan or ovenproof skillet.
- In a small bowl, mix together the melted butter, olive oil, balsamic vinegar, garlic powder, salt, and pepper.
- Layer a third of the potato slices in the bottom of the pan, overlapping them slightly. Brush with some of the butter mixture and sprinkle with thyme and optional Parmesan.
- Repeat the layers two more times, finishing with the remaining butter mixture and any leftover thyme or cheese.
- Cover with foil and bake for 30 minutes. Remove the foil and continue baking for another 20–25 minutes, or until the top is golden brown and crispy.
- Let cool for 10 minutes before slicing and serving. Garnish with extra thyme if desired.
Notes
- A mandoline makes it easier to get evenly thin potato slices.
- Swap Parmesan with a dairy-free alternative to make it fully dairy-free.
- This dish can be prepped ahead and reheated just before serving.
