Ingredients
Scale
- 1 lb fresh salmon fillets (skinless), cut into 1-inch cubes
- 1 cup Panko breadcrumbs
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- Olive oil or cooking spray, for baking or frying
- For the Bang Bang Sauce:
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1–2 tablespoons sriracha (adjust to taste)
- 1 tablespoon honey (optional, for extra sweetness)
- Fresh parsley or green onions, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Lightly grease with olive oil or cooking spray.
- In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, mix Panko breadcrumbs, garlic powder, paprika, salt, and pepper.
- Dredge each salmon cube first in the flour, then dip in the egg, and finally coat in the seasoned Panko mixture.
- Arrange the breaded salmon pieces on the prepared baking sheet. Lightly spray the tops with cooking spray.
- Bake for 12–15 minutes or until golden and crispy. (Alternatively, air fry at 400°F for 8–10 minutes or pan-fry over medium heat.)
- Meanwhile, mix together mayonnaise, sweet chili sauce, sriracha, and honey in a bowl to create the Bang Bang sauce.
- Toss the hot salmon bites gently with the Bang Bang sauce or drizzle over the top.
- Garnish with chopped parsley or green onions and serve immediately!
Notes
- For extra crispiness, broil for the last 1–2 minutes of baking.
- Want it spicier? Add more sriracha to the sauce.
- Serve with rice, in tacos, or over a fresh salad for a complete meal.
