- 2 cups mashed potatoes (about 2 medium russet potatoes)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup shredded cheddar cheese
- 1 large egg
- Salt and freshly ground black pepper, to taste
- 1/2 cup all-purpose flour (plus extra for dusting)
- Oil for frying (vegetable, canola, or sunflower)
- Optional: 2 tbsp chopped green onions or chives
- Optional: 1/4 cup finely chopped red bell pepper
- Optional: 1 small minced jalapeño
- Optional: 1/4 tsp smoked paprika or cayenne
- Optional: 2 tbsp sour cream or Greek yogurt
- Optional: Fresh herbs for garnish
Instructions
- Prepare the ingredients by boiling and mashing the potatoes, then cooling slightly.
- In a large bowl, combine mashed potatoes, corn, cheddar, egg, flour, and seasonings. Mix until combined.
- Shape the mixture into patties, dusting with flour.
- Heat oil in a skillet over medium heat to about 350-375°F (175-190°C).
- Fry the patties for 2-3 minutes per side until golden brown and crispy.
- Transfer cooked fritters to a wire rack to drain excess oil and keep warm.
- Serve immediately, optionally topped with cheese or herbs and a dip of your choice.
Notes
For a lighter version, consider baking the fritters instead of frying. They can also be made ahead and reheated in the oven.
