Instructions

  1. Prepare the Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice. Refrigerate until ready to use.
  2. Prep the chicken: Slice chicken breasts into strips or bite-sized pieces. Season with salt, pepper, and garlic powder.
  3. Set up breading station: Place flour in one bowl, beat eggs in another, and mix breadcrumbs and shredded coconut in a third.
  4. Coat the chicken: Dredge chicken pieces in flour, dip into the egg, then coat thoroughly in the coconut-breadcrumb mixture.
  5. Cook the chicken:
    • To bake: Place coated chicken on a parchment-lined baking sheet and bake at 400°F (200°C) for 20–25 minutes, flipping halfway.
    • To fry: Heat oil in a skillet and fry chicken until golden and cooked through, about 3–4 minutes per side. Drain on paper towels.
