Description

Crispy Fried Piña Colada Rings are a tropical twist on a fairground favorite. Juicy pineapple slices are dipped in a coconut-rum batter, coated with crunchy panko and sweet coconut, then fried to golden perfection.   • 1 fresh pineapple, peeled, cored, and sliced into rings (or 1 can pineapple rings, drained and patted dry)
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup coconut milk or coconut cream
  • 2 tablespoons rum extract (or 1 tablespoon dark rum, optional)
  • 2 large eggs
  • 1 cup sweetened shredded coconut
  • 1 cup panko breadcrumbs
  • Vegetable oil (for frying)

Instructions

  1. Heat 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
  2. In a shallow bowl, whisk together flour, cornstarch, coconut milk, rum extract (or rum), and eggs until smooth to form the batter.
  3. In a separate bowl, combine shredded coconut and panko breadcrumbs.
  4. Dip each pineapple ring into the batter, allowing excess to drip off. Then coat thoroughly in the coconut-panko mixture, pressing gently to adhere.
  5. Carefully fry 2–3 rings at a time for 2–3 minutes per side, or until golden brown and crispy. Transfer to a paper towel–lined plate to drain excess oil.
  6. Repeat with remaining rings. Let cool slightly before serving.
  7. Serve warm with optional caramel, white chocolate drizzle, coconut whipped cream, or crushed macadamia nuts.

Notes

  • Use canned pineapple for convenience, but fresh pineapple provides the best texture and flavor.
  • For a boozy adult treat, use actual dark rum in the batter.
  • Make it extra tropical by garnishing with toasted coconut flakes and a cherry on top.
  • Fried rings can be reheated in an air fryer for a crispy texture.
