Description

A cozy and protein-rich breakfast casserole made with flaky croissants, eggs, sausage, and cheese, perfect for brunch or meal prep.


Ingredients

  • 810 small/medium stale croissants
  • 1 tablespoon olive oil
  • 1 lb turkey or chicken breakfast sausage
  • 1/2 yellow onion, diced
  • 1 red bell pepper, diced
  • 4 oz cream cheese, room temperature
  • 2 cups white cheddar, grated
  • 3 green onions, sliced
  • 1/2 teaspoon paprika
  • 10 large eggs
  • 1 1/4 cups half and half
  • 1 tablespoon Dijon mustard
  • 2 tablespoons hot sauce
  • 2 tablespoons everything bagel seasoning
  • Kosher salt and freshly cracked black pepper, to taste
  • Optional: 1 cup baby spinach, 1 cup sliced mushrooms, 1/2 cup diced tomatoes, 1/4 cup chopped fresh herbs, 1/2 cup reduced-fat cheddar, red pepper flakes

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the sausage and add onion and bell pepper; cook until tender.
  2. Let the mixture cool, then combine with cream cheese, cheddar, paprika, and green onions.
  3. Cut croissants in half and layer in a greased baking dish; fill with sausage mixture.
  4. In a bowl, whisk eggs, half and half, Dijon, hot sauce, salt, and pepper until smooth. Pour over croissants and let soak for at least 1 hour.
  5. Preheat oven to 375°F (190°C). Brush croissants with reserved egg mixture and sprinkle with everything bagel seasoning.
  6. Cover with foil and bake for 30 minutes, then uncover and bake an additional 15–20 minutes until set and golden. Let rest for 10 minutes before serving.
