  • 1/2 tsp salt

  • 1/2 cup sugar (or unrefined sugar or granulated erythritol)
  • 1 tbsp flaxmeal (or 2 tsp cornstarch; optional)
  • Optional: 2 tbsp oil or almond butter for richness

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Grease Pan: Lightly grease a 9 or 10-inch round baking pan with oil or butter.
  3. Combine Ingredients: In a large mixing bowl, combine pumpkin puree, milk, vanilla, cinnamon, baking powder, pumpkin pie spice, and salt. Then add flour, sugar, and flaxmeal (or cornstarch), plus oil/almond butter if using.
  4. Whisk: Whisk until smooth and fully combined.
  5. Transfer to Pan: Pour the batter into the prepared pan and smooth the top.
  6. Bake: Bake for 35 minutes. The center may still jiggle slightly when done.
  7. Cool: Let the pie cool completely at room temperature.
  8. Chill: Transfer to the fridge and chill for at least 6 hours, uncovered, until fully set.
  9. Serve: Slice and serve plain or with your favorite toppings like whipped cream, nuts, or chocolate chips.
