Description

A moist and flavorful cake made with Medjool dates, perfect for a cozy treat any time of the day.

Ingredients

Scale
  • 2 cups Medjool pitted dates
  • 1 1/4 cup hot milk
  • Cooking spray
  • 1 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 2/3 cup olive oil
  • 1 teaspoon vanilla extract
  • Date syrup for topping (about 1/4 cup)

Instructions

  1. Soak the Dates: Place pitted Medjool dates in a bowl. Pour hot milk over them and let soak for about one hour.
  2. Preheat the Oven: Preheat your oven to 350 degrees F (180 degrees C).
  3. Prepare the Cake Pan: Line a 9-inch round cake pan with parchment paper and spray the sides with cooking spray.
  4. Blend the Date Mixture: Transfer soaked dates and milk to a blender and blend until a thick puree forms.
  5. Add Wet Ingredients: Add eggs, olive oil, and vanilla extract to the blender and blend until just mixed.
  6. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  7. Combine Wet and Dry Mixtures: Pour the blended date mixture into the bowl of dry ingredients and gently fold until just combined.
  8. Transfer to the Pan: Pour the batter into the prepared cake pan.
  9. Bake the Cake: Bake for 30-35 minutes, checking for doneness with a toothpick.
  10. Let It Cool: Cool the cake in the pan for 20 minutes before transferring to a wire rack.
  11. Add the Finishing Touch: Pour date syrup over the warm cake before serving.
  12. Serve: Enjoy warm or allow to cool completely; store leftovers covered at room temperature.

Notes

Feel free to add chopped nuts or spices like cinnamon or nutmeg for extra flavor. Ensure dates are soaked long enough for a smooth batter.
