- 500g beef sirloin, thinly sliced
- 2 tablespoons cornstarch
- 1/4 teaspoon freshly ground black pepper
- Salt, as needed
- 2 medium onions, cut into 1-inch cubes
- 1 large green bell pepper, cut into 1-inch cubes
- 1/2 teaspoon minced garlic
- 1/2 teaspoon minced ginger
- 1 chopped fresh red or green chili
- 3/4 teaspoon freshly ground black pepper
- 3 tablespoons light soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon rice vinegar
- 1/2 teaspoon brown sugar
- 1 teaspoon toasted sesame oil
- Optional: broccoli, carrots, snap peas, cashews, peanuts, fresh herbs
Instructions
- Prepare the beef by slicing it thinly against the grain and mixing with cornstarch, black pepper, and salt. Let sit for 15 minutes.
- Chop onions and bell pepper into cubes, and mince garlic and ginger.
- Whisk together sauce ingredients in a bowl and set aside.
- Heat a wok or skillet over high heat, and add oil. Add marinated beef and stir-fry for 3-4 minutes until browned.
- Remove beef and stir-fry onions for 2-3 minutes until softened. Add bell pepper and chili, continuing to stir-fry for another 2-3 minutes.
- Add garlic and ginger to the vegetables and stir-fry for 30 seconds.
- Pour sauce over the vegetables and return the beef, stirring to combine. Cook for an additional 1-2 minutes until heated through and the sauce thickens slightly.
- Serve immediately from the wok to plates.
Notes
Customize with additional vegetables or proteins like chicken, tofu, or shrimp. Store leftovers in an airtight container for up to three days.
