Ingredients

  • 500g beef sirloin, thinly sliced
  • 2 tablespoons cornstarch
  • 1/4 teaspoon freshly ground black pepper
  • Salt, as needed
  • 2 medium onions, cut into 1-inch cubes
  • 1 large green bell pepper, cut into 1-inch cubes
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon minced ginger
  • 1 chopped fresh red or green chili
  • 3/4 teaspoon freshly ground black pepper
  • 3 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon brown sugar
  • 1 teaspoon toasted sesame oil
  • Optional: broccoli, carrots, snap peas, cashews, peanuts, fresh herbs

Instructions

  1. Prepare the beef by slicing it thinly against the grain and mixing with cornstarch, black pepper, and salt. Let sit for 15 minutes.
  2. Chop onions and bell pepper into cubes, and mince garlic and ginger.
  3. Whisk together sauce ingredients in a bowl and set aside.
  4. Heat a wok or skillet over high heat, and add oil. Add marinated beef and stir-fry for 3-4 minutes until browned.
  5. Remove beef and stir-fry onions for 2-3 minutes until softened. Add bell pepper and chili, continuing to stir-fry for another 2-3 minutes.
  6. Add garlic and ginger to the vegetables and stir-fry for 30 seconds.
  7. Pour sauce over the vegetables and return the beef, stirring to combine. Cook for an additional 1-2 minutes until heated through and the sauce thickens slightly.
  8. Serve immediately from the wok to plates.

Notes

Customize with additional vegetables or proteins like chicken, tofu, or shrimp. Store leftovers in an airtight container for up to three days.
