Instructions

  1. Preheat oven to 375°F (190°C).
  2. Carefully slice a pocket into the side of each chicken breast without cutting all the way through.
  3. In a bowl, combine spinach, mozzarella, and sun-dried tomatoes.
  4. Stuff each chicken breast with the mixture and secure the openings with toothpicks or kitchen twine.
