Description

Ingredients

  • 1/4 cup vegetable oil
  • 2 eggs
  • 3/4 cup sugar
  • 3/4 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3 tablespoons sugar (for coating)
  • 2 teaspoons cinnamon (for coating)
  • Optional: chopped nuts, chocolate chips, icing or glaze

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Spray the donut pan liberally with nonstick cooking spray.
  3. In a large bowl, whisk together vegetable oil, eggs, and sugar until well combined.
  4. Beat in the pumpkin puree, pumpkin pie spice, salt, baking powder, and vanilla until fully incorporated.
  5. Gently fold in the flour using a spatula. Do not overmix.
  6. Fill each donut pan cavity about three-quarters full using a spoon or piping bag.
  7. Bake for 15–17 minutes or until a toothpick inserted comes out clean.
  8. Let the donuts cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  9. In a large plastic bag, combine the sugar and cinnamon for coating.
  10. Place cooled donuts one at a time into the bag, seal, and shake lightly to coat.

Notes

  • Use pure pumpkin puree, not pumpkin pie filling.
  • Substitute applesauce or melted coconut oil for a healthier fat option.
  • Use brown sugar for a richer flavor.
  • To make vegan, use a flaxseed egg substitute.
