- 2½ pounds russet or Yukon gold potatoes, peeled and thinly sliced
- 3 tablespoons butter
- ½ onion, chopped
- 3 cloves garlic, minced
- 2½ cups heavy cream

- 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
- 3 cups cheddar cheese, grated

Instructions
- Preheat oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Prepare sauce base: In a medium saucepan, melt butter over medium heat. Add onions and garlic and sauté until fragrant and softened, about 3–4 minutes.
- Add flour: Stir in flour and cook for 1 minute, whisking constantly to form a roux.
- Make the cream sauce: Slowly whisk in the heavy cream, continuing to stir until smooth. Cook until the sauce thickens slightly, about 3–5 minutes. Season with salt, pepper, and thyme.
- Add cheese: Remove the sauce from heat and stir in 2 cups of the grated cheddar cheese until melted and smooth.
- Layer the potatoes: Arrange half the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the potatoes. Repeat with the remaining potatoes and sauce.
- Top and bake: Sprinkle the remaining 1 cup of cheese on top. Cover with foil and bake for 40 minutes. Remove foil and bake for another 20–25 minutes, or until the top is golden and bubbly and potatoes are tender.
- Garnish and serve: Let cool for 5–10 minutes. Garnish with chives or green onions before serving if desired.

- Yukon gold potatoes give a creamy texture, while russets are starchier and more traditional.
- Use a mandoline slicer for even, thin potato slices that cook uniformly.
