- 2 chipotle peppers in adobo sauce, minced
- ½ cup ranch dressing
- 4–6 large flour tortillas
- 1 cup shredded cheddar cheese
- 1 cup chopped romaine lettuce
- 1 cup diced fresh tomatoes
- ½ cup thinly sliced red onion
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Lime wedges, for serving
Instructions
- In a small bowl, mix ranch dressing with minced chipotle peppers to create the chipotle ranch sauce. Set aside.
- Season sliced chicken with cumin, garlic powder, salt, and pepper.
- Heat olive oil in a skillet or grill pan over medium heat. Add chicken and cook until fully cooked and slightly charred, about 5–7 minutes.
- Warm the flour tortillas in a dry skillet or microwave for pliability.
- Assemble each burrito by spreading chipotle ranch sauce over the tortilla, then layering chicken, cheese, lettuce, tomatoes, and red onion.
- Roll up tightly, folding in the sides as you go. Grill the burritos seam-side down in a hot skillet for 1–2 minutes to seal and toast.
- Serve warm with lime wedges on the side.
