  • 1 can (13.5 oz) full-fat coconut milk
  • 1 tablespoon coconut oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground ginger
  • 1 teaspoon turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup jasmine rice
  • 1 1/2 cups water
  • 1 tablespoon lime juice
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: sliced green onions, shredded coconut, chopped peanuts

Instructions

  1. In a medium saucepan, combine jasmine rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and stir in lime juice.
  2. While the rice cooks, heat coconut oil in a large skillet over medium heat. Add sliced chicken strips and cook until browned on all sides, about 5–7 minutes.
  3. Add garlic powder, onion powder, ground ginger, turmeric, salt, and black pepper to the skillet with the chicken. Stir to coat the chicken evenly with the spices.
  4. Pour in the coconut milk and bring the mixture to a simmer. Cook for an additional 5–7 minutes, until the chicken is cooked through and the sauce has thickened slightly.
  5. To assemble the bowls, divide the coconut rice among serving bowls. Top with the coconut chicken mixture and garnish with fresh cilantro. Add optional toppings like sliced green onions, shredded coconut, or chopped peanuts for extra flavor and texture.

Notes

  • For a spicier kick, add a diced jalapeño or a dash of red pepper flakes to the chicken mixture.
  • To make this dish lower in fat, use light coconut milk instead of full-fat coconut milk.
