  • 1 cup purple cabbage, thinly sliced
  • 1 cup carrots, shredded
  • 1 red bell pepper, thinly sliced
  • 2 green onions, thinly sliced
  • ½ cup toasted almonds, sliced or slivered
  • 1 cup crispy chow mein noodles (optional but so good)
  • 1 tablespoon sesame seeds (for garnish)

For the Asian Sesame Dressing:

  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey (or maple syrup)
  • 1 teaspoon fresh ginger, grated
  • 1 garlic clove, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice

Instructions

  1. In a large mixing bowl, combine shredded chicken, green and purple cabbage, carrots, bell pepper, and green onions.
  2. In a small bowl or jar, whisk together soy sauce, rice vinegar, sesame oil, honey, ginger, garlic, olive oil, and lime juice until well combined.
  3. Pour the dressing over the salad and toss thoroughly to coat everything evenly.
  4. Add toasted almonds and crispy chow mein noodles (if using). Toss again.
  5. Sprinkle with sesame seeds just before serving.
  6. Serve immediately or chill for 15–30 minutes for deeper flavor.
