Ingredients

  • 1 (16-ounce) bottle Italian dressing
  • 4 boneless, skinless chicken breasts (about 1.52 pounds total)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste (optional)
  • 1 small onion, sliced (optional)
  • 23 cloves garlic, minced (optional)
  • 1 teaspoon dried oregano or Italian seasoning (optional)
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1 cup sliced mushrooms (optional)
  • 1/2 cup low-sodium chicken broth (optional)
  • Fresh basil or parsley for garnish (optional)
  • Red pepper flakes (optional)

Instructions

  1. Pat each chicken breast dry with paper towels and season lightly with salt and pepper if desired.
  2. Place chicken in a single layer in the bottom of the slow cooker. Scatter onions or mushrooms under and around the chicken if using.
  3. Pour the entire bottle of Italian dressing over the chicken.
  4. If desired, add 1/2 cup low-sodium chicken broth for a thinner sauce.
  5. Sprinkle grated Parmesan evenly over the chicken.
  6. Cover the slow cooker and set it on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
  7. Check for doneness when the chicken reaches 165°F; serve whole or shred as desired.
  8. Garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container for up to 4 days; reheat gently. For extra flavor, sear the chicken before slow cooking.
