- 1 (16-ounce) bottle Italian dressing
- 4 boneless, skinless chicken breasts (about 1.5–2 pounds total)
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste (optional)
- 1 small onion, sliced (optional)
- 2–3 cloves garlic, minced (optional)
- 1 teaspoon dried oregano or Italian seasoning (optional)
- 1/2 cup cherry tomatoes, halved (optional)
- 1 cup sliced mushrooms (optional)
- 1/2 cup low-sodium chicken broth (optional)
- Fresh basil or parsley for garnish (optional)
- Red pepper flakes (optional)
Instructions
- Pat each chicken breast dry with paper towels and season lightly with salt and pepper if desired.
- Place chicken in a single layer in the bottom of the slow cooker. Scatter onions or mushrooms under and around the chicken if using.
- Pour the entire bottle of Italian dressing over the chicken.
- If desired, add 1/2 cup low-sodium chicken broth for a thinner sauce.
- Sprinkle grated Parmesan evenly over the chicken.
- Cover the slow cooker and set it on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
- Check for doneness when the chicken reaches 165°F; serve whole or shred as desired.
- Garnish with fresh herbs before serving.
Notes
Store leftovers in an airtight container for up to 4 days; reheat gently. For extra flavor, sear the chicken before slow cooking.
