Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, garlic, carrots, and celery. Sauté for 5–7 minutes until the vegetables are softened and fragrant.
  3. Pour in the vegetable broth and add the dried oregano and thyme. Season with salt and pepper to taste.
  4. Bring the soup to a gentle boil, then reduce the heat and simmer for 15–20 minutes to allow the flavors to meld.
  5. Stir in the chopped spinach or kale and cook until wilted, about 2 minutes.
