- 2 cups carrots, diced
- 1 cup lentils (brown or green preferred)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
- Optional: A squeeze of lemon juice
- Optional: Crushed red pepper or chili powder
- Optional: Coconut milk
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the diced carrots and lentils, followed by cumin and coriander. Stir to coat the ingredients in the spices.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce heat to a simmer and cook for 25–30 minutes, stirring occasionally, until the lentils are tender.
- Season with salt and pepper to taste. Add optional ingredients such as lemon juice, crushed red pepper, or coconut milk if desired.
- Serve hot, garnished with fresh parsley.
Notes
- Canned lentils can be used to shorten cooking time; rinse before adding.
- Leeks may replace onions for a milder flavor.
- Frozen carrots work well if fresh ones are unavailable.
- The soup stores well in the fridge for up to one week or in the freezer for three months.
