A comforting and delicious dish that pairs roasted spaghetti squash with creamy feta cheese and sweet cherry tomatoes.

- 1 large spaghetti squash
- 1 8-ounce block of feta cheese
- 1 cup cherry tomatoes, halved
- 4 tablespoons olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place squash halves cut-side up on the baking sheet.
- Break the feta cheese block in half and place each half in the center of each squash half.
- Scatter the halved cherry tomatoes on top of the squash and feta.
- Mix garlic, olive oil, salt, and black pepper in a small bowl and drizzle over the squash and feta.
- Bake for 45 to 50 minutes until the feta is melted and the squash is tender.
- Allow to cool slightly then use a fork to shred the squash into strands.
- Mix the melted feta with the squash and tomatoes, and top with fresh basil.
Notes
Remember to choose a firm spaghetti squash without blemishes for the best results. Fresh basil is crucial for flavor!
