Ingredients
Scale
- 1 lb button or cremini mushrooms, cleaned and sliced
- 1 cup all-purpose flour
- 1/2 cup cornmeal (optional)
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil, for frying (enough to fill skillet or pot 2 inches deep)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 teaspoon garlic powder (for ranch)
- 1 teaspoon onion powder
- 1 teaspoon dried dill
- 1 teaspoon parsley
- 1/4 teaspoon salt (for ranch)
- 1/4 teaspoon black pepper (for ranch)
- 1–2 tablespoons milk (to adjust ranch consistency)
- Crushed red pepper flakes (optional)
- Chopped chives (optional)
Instructions
- In a medium bowl, whisk together the eggs and 1/4 cup milk to make an egg wash.
- In another bowl, mix the flour, cornmeal (if using), garlic powder, paprika, salt, and pepper.
- Dip each sliced mushroom into the egg wash, then dredge in the flour mixture until well coated.
- Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
- Fry the coated mushrooms in batches, without overcrowding the pan, until golden brown and crispy, about 2–3 minutes per side.
- Remove the mushrooms with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- To make the ranch dressing, whisk together mayonnaise, sour cream, garlic powder, onion powder, dill, parsley, salt, and pepper in a bowl. Add 1–2 tablespoons milk to reach desired consistency.
- Garnish the ranch with chopped chives and crushed red pepper flakes if desired. Serve alongside the hot fried mushrooms.
Notes
- For extra crispiness, double-dip the mushrooms by repeating the egg and flour steps.
- Use a thermometer to maintain oil temperature around 350°F for best frying results.
- Serve immediately after frying for the crispiest texture.
- The ranch dressing can be made a day in advance and refrigerated.
