Description

A comforting and indulgent dish featuring a creamy cheese wheel coated in breadcrumbs and fried to perfection, served with crispy roasted peewee potatoes.

Ingredients

Scale
  • 1 caprice de dieux or Brie wheel (about 48 oz)
  • 1 lb peewee potatoes
  • 3 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tsp chipotle powder
  • 1 tsp garlic powder
  • 1 1/2 tsp Herbes de Provence
  • Kosher salt, to taste
  • 3 tbsp flour
  • 1 large egg
  • 1 tbsp heavy cream
  • 1/2 cup panko breadcrumbs
  • 1 cup plain breadcrumbs
  • Oil for frying
  • Chives, chopped
  • Flaky salt, to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet.
  2. Wash and dry the peewee potatoes, cutting larger ones in half for even cooking.
  3. In a bowl, toss potatoes with olive oil, smoked paprika, chipotle powder, garlic powder, Herbes de Provence, and salt.
  4. Spread the potatoes on the baking sheet and roast for 20–25 minutes until golden and tender.
  5. Set up dredging stations with flour, egg and cream wash, and breadcrumbs.
  6. Coat the cheese wheel in flour, then egg mixture, and finally breadcrumbs, pressing to adhere.
  7. Chill the coated cheese in the fridge for 15 minutes.
  8. Heat oil in a skillet to 350°F (175°C). Fry the cheese for about 1.5-2 minutes per side until golden brown.
  9. Drain fried cheese on paper towels; sprinkle with flaky salt and chives before serving.
  10. Slice and serve immediately with roasted potatoes and accompaniments.

Notes

For a flavorful twist, serve with honey, fig jam, or mustard. Ensure the oil temperature is consistent for best frying results.
