A quick and flavorful garlic butter cod dish served with a sweet chili lime sauce, perfect for a cozy weeknight dinner.

- 500 g cod fillets, cut into strips
- 3 tbsp butter
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- Juice of 1/2 lime
- 1 tbsp olive oil
- 4 tbsp sweet chili sauce
- Juice of 1 lime
- 1 tsp honey (optional)
- 1 tsp soy sauce or fish sauce (optional)
- 1 tsp finely grated garlic or ginger (optional)
- Fresh cilantro or parsley (for garnish)
- Lime wedges (for serving)
- Crushed red pepper flakes (optional)
- Sesame seeds (optional)
- Spring onions (scallions) for garnish
Instructions
- Pat the cod strips dry with paper towels and squeeze lime juice over them. Season with salt, pepper, and paprika.
- Heat a large pan over medium heat and add olive oil and butter. Once melted, add minced garlic and sauté until fragrant.
- Add the seasoned cod strips in a single layer and cook undisturbed for 2–3 minutes until golden. Flip and cook for another 2–3 minutes until opaque.
- Transfer the cooked strips to a plate and tent with foil to keep warm.
- In a small bowl, combine sweet chili sauce, lime juice, honey, soy sauce, and grated garlic or ginger. Adjust seasoning to taste.
- Drizzle the sauce over the cod strips or serve on the side. Garnish with cilantro and lime wedges before serving.
Notes
Keep cooked cod warm in a low oven if making in batches. The sauce can be prepared in advance and stored in the fridge for up to 2 days.
