Description

A quick and flavorful garlic butter cod dish served with a sweet chili lime sauce, perfect for a cozy weeknight dinner.


Ingredients

  • 500 g cod fillets, cut into strips
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • Juice of 1/2 lime
  • 1 tbsp olive oil
  • 4 tbsp sweet chili sauce
  • Juice of 1 lime
  • 1 tsp honey (optional)
  • 1 tsp soy sauce or fish sauce (optional)
  • 1 tsp finely grated garlic or ginger (optional)
  • Fresh cilantro or parsley (for garnish)
  • Lime wedges (for serving)
  • Crushed red pepper flakes (optional)
  • Sesame seeds (optional)
  • Spring onions (scallions) for garnish

Instructions

  1. Pat the cod strips dry with paper towels and squeeze lime juice over them. Season with salt, pepper, and paprika.
  2. Heat a large pan over medium heat and add olive oil and butter. Once melted, add minced garlic and sauté until fragrant.
  3. Add the seasoned cod strips in a single layer and cook undisturbed for 2–3 minutes until golden. Flip and cook for another 2–3 minutes until opaque.
  4. Transfer the cooked strips to a plate and tent with foil to keep warm.
  5. In a small bowl, combine sweet chili sauce, lime juice, honey, soy sauce, and grated garlic or ginger. Adjust seasoning to taste.
  6. Drizzle the sauce over the cod strips or serve on the side. Garnish with cilantro and lime wedges before serving.

Notes

Keep cooked cod warm in a low oven if making in batches. The sauce can be prepared in advance and stored in the fridge for up to 2 days.
