Description

Garlic Herb Ribeye Steak and Potatoes is a flavorful, hearty meal perfect for any special dinner or indulgent weekend treat. Tender ribeye is seared to perfection and paired with golden, crispy potatoes, all infused with garlic herb butter.


Ingredients

  • 1 pound ribeye steak
  • 16 oz potatoes (Yukon Gold or red potatoes)
  • 1 tbsp avocado oil
  • 4 tbsp Kerry Gold Unsalted Butter
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1/2 tbsp chives, chopped
  • 1/2 tbsp thyme, chopped
  • 1/2 tbsp rosemary, chopped
  • 2 tbsp Onion Butter Rub
  • Salt and pepper, to taste

Optional Add-Ons:

  • Splash of red wine (for depth of flavor)
  • Pinch of red pepper flakes or a dash of hot sauce (for heat)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the potatoes into bite-sized pieces. Toss with salt, pepper, and a bit of avocado oil. Spread on a baking sheet and roast for 25–30 minutes or until golden and tender.
  3. While the potatoes roast, season the ribeye steak with salt, pepper, and the onion butter rub on both sides. Let it rest at room temperature for 10–15 minutes.
  4. Heat a cast-iron skillet over high heat and add avocado oil. Once hot, sear the steak for 2–3 minutes on each side until a nice crust forms.
  5. Reduce heat to medium and add butter, garlic, parsley, chives, thyme, and rosemary to the pan. Baste the steak with the garlic herb butter for another 1–2 minutes.
  6. Transfer the skillet to the oven and cook for another 5–7 minutes (or until your desired doneness is reached).
  7. Let the steak rest for 5–10 minutes before slicing. Serve with the roasted potatoes and a drizzle of the leftover herb butter from the skillet.

Notes

  • Letting the steak rest after cooking helps retain its juices.
  • Use a meat thermometer for perfect doneness: 130°F for medium-rare, 140°F for medium.
